Vichyssoise or leek cream: our light and healthy version

This is one of our favourite recipes because it is simple, it has finesse, it can be served warm or cold, and it is delicious.
Our version is dairy-free so it is much lighter than the traditional. We use soya milk and olive oil instead of fatty cream, butter and regular milk. So, you can take a second serving without feeling guilty! 😉
